Banitsa is a Bulgarian pastry dish that is basically prepared by layering a mixture of whisked eggs, natural yogurt, and pieces of white brined cheese between filo pastries and baking this in an oven. It can be served hot as well as cold; it differs from taste to taste. It is very sweet in taste and people enjoy eating it. Ingredients used to make Banitsa

  • Phyllo Dough
  • 8 tablespoons of butter
  • A half lb of sirene (Bulgarian cheese) or feta, coarsely crumbled
  • Three fourth lb of Bulgarian yogurt (preferably sheep's milk yogurt)
  • 4 whole eggs
  • 1 egg yolk
  • Salt
  • Pepper


  • Take a bowl add yogurt and 4 whole eggs in it. Whisk the mixture with help of a whisker.


  • Now add cheese, salt, and pepper to the mixture and mix all the ingredients again.


  • Apply the melted butter on two sheets of phyllo. Apply it to the top of the sheet with help of a brush.


  • Now superimpose a third sheet on the first two sheets and apply butter on its top with help of a brush.


  • Now turn the three sheets and then apply butter on the non coated side of the sheet.


  • Now pour yogurt, egg, and cheese mixture on top of the filo sheets.


  • Now with help of your hands roll the whole preparation just like a long sausage. Get the roll as long as possible.

  • Repeat this process with other sheets also and get 4 long rolls of three superimposed sheets of filo.


  • Then place them in a pan on a baking sheet.


  • Gently place the first roll by sticking to the edge of the circle, then add the rest of the rolls to it.


  • Again mix the egg yolk with the melted butter. Mix them properly with the help of a whisker.


  • Then brush the whole banitsa with it.


  • The next step is to bake it at 400F/200C for about 25 to 30 minutes.


  • When it is baked the banitsa should be golden in color.


  • Take it out of the oven and let it get a little cool. It can be served hot, warm, or cold.
